It’s been way too impossible trying to tack down a savoury vegan breakfast scone. Try this. Slice it in half an add a pad of butter or some other fun fixins.
1 tbsp flax meal
1/4 cup warm water
3/4 cup dairy free milk
1 tbsp apple cider vinegar
2 tsp sugar
1 tbsp baking powder
2 1/4 cups all purpose flour
1/2 cup vegan margarine
1/2 tsp salt
1 tbsp chopped garlic
1/4 cup herbs (I used chives and parsley)
1/3 cup vegan cheese (I prefer Violife)
1/2 cup nutritional yeast
1/3 cup Brother Sprout Da B’y Con vegan bacon bits
Line some parchment on a baking sheet and pre heat that oven to 400°F. Mix the flax and water (set aside) and create the buttermilk by combining the milk and vinegar (set aside).
Combine dry ingredients, add in wet ingredients, then stir in the mix-ins. Mix into a dough and knead a few times. Form into a disc about 8-9 inches in diameter and chop into 8 pieces.
Bake at 400°F for 25 minutes.
