Peanut citrus dressing.

This is a really, really easy dressing (or a dip/sauce/marinade) that only takes a few shakes. If you're new to not buying the dogshit that Kraft puts out, this is a good starter recipe. Tangy, nutty, sweet, savory, and a bit spicy. Leave out the ginger if you don't want that kind of kick, alright?

Whisk together
- 3 tbsp lime juice
- 3 tbsp peanut butter
- 1 tbsp light soy sauce
- 1 tbsp maple syrup
- 1/2 garlic clove, grated
- 1/2 tsp ginger, grated
- 1/2 tbsp sriracha
- 1 tbsp rice vinegar

I drizzled this over a slaw made of
- red cabbage
- beets
- cucumber
- carrots
- bean sprouts
- alfalfa sprouts
- daikon
- scallion
- avocado
- snap peas
- hemp hearts
- cashews

  1. Sounds amazing! I have a very similar peanut dressing I tried out but my peanut butter didn't mix well and my dressing was chunky:( How did you get your so smooth?

    1. Hey Daphne! Did you use a natural nut butter, or a "KRAFT"esque brand? In my experience, the oil that settles in natural PBs can be tricky to smooth out, and the added sugars in sweetened PBs can also make it hard to separate from itself.

So, I had to whisk mine, a LOT, with a baby wire whisk I scored at Dollarama. I was worried at first because it looked like an oily, blobby mess.. but after 1-2 minutes, it turned out as pictured :) use a big enough bowl so you can give'r, too! x
