Beef stroganoff.

I very clearly remember making beef stroganoff in Grade 10 Home Economics. I veganized it easy peasy as my peers made "beef stroking-off" jokes that weren't really funny, even for the tenth grade. This may be the ugliest dinner to date, take a gander.

2 tbsp vegan butter
2 tbsp white flour
2 cups unflavoured almond milk, hemp milk, etc.
Salt and pepper

1/2 cup chopped onions
1 clove garlic
1/2 cup chopped mushrooms
1 cup vegan ground round (I love Gardein, Yves is up there also)

1/2 cup vegan sour cream

Chopped green onion

Noodles / rice / quinoa -- I used noodles

Begin sauteing your garlic, onions and mushrooms in a frying pan.

In a saucepan, melt your butter. Whisk in your white flour. Let the flour cook out by cooking it on medium-high heat for 2-3 minutes. Add in your milk alternative, salt and pepper to taste. Your sauce will thicken up in under five minutes. Make sure it comes to a boil just in case that flour taste hadn't cooked out before. 

Add in your sauted vegetables, and your veggie beef to the sauce, stir, and add in your vegan sour cream.

This is good with rice, noodles, spaghetti squash, quinoa, couscous, and probably a bunch more. Top it with green onions if you like. 

Everything should be done at the same time, to boot. So that's rad.
